Multi-dimensional Order status?

Question

I am not looking for a way to edit the Order Status list of WooCommerce, I, however, looking for a way to create a multi-dimensional list of statuses. The direct example (which is available natively on another platform) is a list for payment status, and fulfillment status.

Any suggestions on how to achieve this?
